Lettuce has gotten to be nice leaves. Should I cut it to keep it growing or just let it grow. I’m afraid the leaves will get bitter if they stay.

of course start picking leaves as soon as you feel that it is ready, it usually happens in around three weeks when the first leaves are ready to be harvested. Just make sure you cut the outer leaves first and leave the inner leaves to grow more. Lettuce is usually ready to be cut in one go in four to six weeks after planting.
As it matures, yes, flavor may turn to the bitter side.
