Eggplant is kinda feasible, but using dwarf cultivars and growing one plant per pod is the key for success. Pre growing any cultivars (in any size as matured) for repotting is feasible too.
Broccoli needs a lot of time to form a head, but if you choose an early variety it may be feasible in about 90 days. If you don’t really get a head out of the plant, at least the leaves are tasty and juicy as kale (as it is the same plant, basically).
